Cauliflower hot 'wings'

I really love this recipe for hangouts, game nights, or an easy snack to bring to an event. You can control the level of heat but I like to turn it up and make myself cry a little while enjoying these, by using several types of hot sauce. Cauliflower is such a versatile vegetable and works so well for these vegan wings. The seem to be gaining a lot of popularity too as I’ve seen them on several menus lately. They take about 45 minutes total but most of that is in the baking time, they are super easy to make.

Gather Up:

1 head of Cauliflower, broken apart into reasonably sized pieces

1/2 cup water

1/2 cup cashew milk (or any nut milk)

3/4 cup all purpose flower

salt and pepper

1 tsp. paprika

1 tsp cumin

butter

Franks Red Hot Sauce and any other hot sauces you have on hand

2 tsp garlic powder

dried oregano

Mix the spices, flours, milk and water in a bowl until the mixture is well combined and smooth. It should have the look of a pancake mix.

Preheat the oven to 425 and line a baking sheet with parchment paper or a non stick silicone pad.

Dip each piece of Cauliflower into the mixture, and turn to coat with tongs. Shake off excess batter and place on baking sheet without the pieces touching, in a single layer.

Bake for 20 minutes, turning over once halfway through cooking.

While these are baking, melt 1 tbsp butter with 1/4 cup Franks Red Hot Sauce in a saucepan. I like to add several dashes of other hot sauces that I have on hand here as well. I’m a little obsessed with hot sauce so I tend to have several different flavors on hand and like to combine many of them into this. Stir until the butter and hot sauce is well incorporated.

Pour this lightly onto each of your wings, using up all of the hot sauce mix. Continue to bake for about 10-15 more minutes. Serve immediately with your choice of dipping sauce such as Blue Cheese, Ranch or extra hot sauce.
