Savory Spinach Pie

This pie is super easy to make and is a great appetizer or breakfast meal.  I brought these to a recent party where I wanted to bring something homemade but also easy to make.  I've since made them several more times to eat as breakfast during the week.  They are filling and certainly better than anything you can grab on the go.  The best part is that the ingredients can be modified as needed to make it unique.  (Just stick to the basic recipe for the dough and experiment from there.)  I don't always have time to make something in the morning so having these in the fridge ready to just heat up really makes my morning meal planning super easy.

You Will Need:

1 12 oz. package of frozen spinach, thawed and drained well

1 Cup of flour

1 tsp salt

1 tsp baking powder

1/8 tsp smoked jalapeno pepper powder

2 eggs (Or flax seed alternative for Vegan)

1 cup milk or alternative nut milk

1/2 cup melted butter (Or Vegan alternative)

1 finely chopped white onion

8 oz. shredded cheese (cheddar and mozzarella work well)

2 cloves garlic, minced

Preheat the oven to 375.  Oil a 9x13 baking pan. Mix the flour, salt and baking powder in a large bowl.  Add the eggs and mix well.  Add milk and melted butter and mix until a batter is formed.

Add the remaining ingredients an stir until well mixed.  Pour into the baking dish, spreading evenly and smoothing out to a consistent thickness with a rubber spatula.

Bake 30 minutes.  Cool to room temperature before serving.
