Vegan Energy Bars with only 5 ingredients

I love the snack bars that a certain company makes boasting only 4 to 5 ingredients so I looked at a few resources online and determined that these would be easy to make at home.  Whether or not they end up cheaper or more expensive than store bought brands, you're going to end up with a product that you know exactly what's in it.  It's awesome when you have 100% control over what you're going to be eating.

 

These bars are perfect for a quick energy boost before a run or just a healthy snack in the middle of the day.  They require no cooking at all and are ready in about 30 minutes.  Best part is that there's only 5 ingredients.

 

Gather Up:

1/4 Cup Dates

1 Cup dried tart cherries

1 Cup Raw Organic almonds

1/8 tsp cinnamon

2 TBSP toasted coconut

Soak the cherries in boiling water for about 10 minutes.  Pat them dry.  Pit the dates if you bought them whole and measure them very packed and chopped up.  In a Food processor blend the almonds until fine.  Add the coconut and pulse until well blended.

Add the chopped dates, cinnamon and tart cherries and pulse until well combined.  Line a bread pan with plastic wrap.  It's easiest to spray the pan with oil, lay in the plastic and then spray the plastic layer lightly with oil.  Spread the mixture into the pan and flatten well with another layer of plastic wrap or parchment paper.  Even out the mixture as best as possible and pushing into the corners.  Refrigerate for at least 30 minutes before cutting.  Individually wrap and store in the fridge for about 3 weeks.
