After the Party-Queso Mac N Cheese

Like with so many parties and get-togethers, if you came as a guest you're going home with some leftovers.  After a very fun birthday party this weekend where we had several homemade chilies and fun sides, I went home with about 2 cups of delicious queso.  Now unless I was planning on doing cheese shots later on, I needed a recipe to use it up in a fun way.  There arrived the Queso Mac N Cheese.  Being a complete leftover made meal I just used what I had on hand and it came out pretty darned good.  You could easily just pre-make some queso if you don't have the ability to attend a killer fun party.

This is very customizable using whatever you have on hand.

You will Need:

2 Cups Queso sauce

1 large yellow onion sliced thin

3 garlic cloves, minced

1/4 Cup Parmesan Cheese

1/2 Cup Panko bread crumbs

1 TBSP dried parsley

1/2 cup sliced mushrooms

1 package elbow macaroni noodles

Boil and prepare the macaroni.  Preheat the oven to 350. Once is cooks to al dente, rinse under cold water to stop the cooking process and set aside.

In a medium saucepan, saute the onions and mushrooms until carmelized.  Add the garlic and continue to cook for another 2 minutes.

Mix the onion mix into the noodles.  Stir in the queso sauce and mix well with the Parmesan cheese and 1/2 tsp of the parsley.   Taste the noodles to determine if any salt and pepper is needed which will depend on your queso.  Pour into a baking pan.  Top with the breadcrumbs and a little more Parmesan.  Sprinkle the remaining parsley on top.  Bake for 20 minutes or until golden and browned top.
