White Chocolate Chip Oatmeal Cookies

Move over Otis!  These are so good and I will pretend for a second that the Oatmeal and nuts make them good for you.   I was surprised considering the amount of sugar that these were not as sweet as I expected which is a good thing.  In a future version I would definitely trade the pecans for Macadamia nuts!

Ingredients

1 Cup of Butter (room temperature)

1 cup Light Brown Sugar

1 Cup White Sugar

3 eggs

2 tsp vanilla extract

3 Cups AP Flour

1 tsp baking powder & soda

1 tsp salt

1 cup rolled oats

2 Cups White chocolate chips

1 cup chopped pecans

Preheat the oven to 350.  Greese cookie sheet or line with parchment paper.

In a medium bowl using a mixer, cream together the butter and both sugars until smooth.  Stir in eggs and vanilla.   Mix in the dry ingredients except nuts and chocolate.  Add these after the first mix is well blended.

Place round balls (about 2 TBSP) onto the cookie sheets leaving room between them.  Bake for about 15 minutes and place on wire racks to cool.
