Spice Cookies with Whiskey Frosting

These cookies are amazing but I have to say that the Whisky Butter frosting is mind blowing.  

Using a nice whisky is pretty important because it's not cooked off so go with good flavor.  I like Tullamore Dew Irish WhiskEy.  And better yet, have a glass on the rocks while you're making these.  You Deserve it, and it's the Holidays.

These will definitely be a hit at any Holiday gathering, maybe just not for the kids.  One person sure to enjoy these is Santa so lets just tell the kids that they are special cookies only he can eat.  Or make up some other stuff why they can't have them, it doesn't matter.  These are a great Adult cookie and easy to make when you need to bring something to the party.

For the cookie dough

1.5 Cups softened butter

1.4 Cup Blackstrap Molasses

1 Egg

2 Cups AP Flour

2 tsp baking soda

1 tsp Cinnamon

1 tsp Ground Ginger

1 tsp Ground cloves

1/2 tsp fine salt

Preheat oven to 375.  In a Mixer, mix all ingredients until batter is smooth and shiny.  Place 1.5 TBSP Balls 2 inches apart on parchment lined baking sheets.  Bake for 15 minutes.  Remove from oven and let cool before transferring to a wire rack until crispy.

For the frosting

1.5 Cups Powdered Sugar

1/2 Cup Softened butter

1 tsp Vanilla extract

2 TBSP Whiskey

1 TBSP Vanilla Nut Milk

In a mixer with a whisk attachment, whisk the butter and sugar until smooth.  Slowly add in the wet ingredients.  Thin with additional milk if necessary.  You want a smooth frosting that is thick yet easily spreadable.

Frost cool cookies with frosting.  Don't forget to dip a finger in there and get a good taste.
