Baking Savory Style- Banana Basil Muffins

It never fails.  In the dead of Winter I look at at the garden in it's hibernal state and long for the tastes of summer.  Yet the conflict presents itself when I dream up those cozy sweet baked recipes that are perfect on a cold day.  It's the perfect time to blend both thoughts into a Savory dessert showcasing some tastes of summer here in the middle of a cold Winter.

I often freeze Bananas when they become overripe so that I can make banana bread or muffins but the same old recipes can get a little boring.  Today I thought that maybe Basil would be a good combination with the sweetness of the bananas.   Combine this with a lemon drizzle on top to add some tartness and we end up with a savory yet sweet Winter treat.

Ingredients:

1 1/2 Cups All Purpose Flour               3/4 Cups Sugar

1 tsp. baking powder                           1 egg

1 tsp baking soda                                1/3 Cup melted butter            

3 ripe bananas                                    3 TSP minced fresh basil

1/2 tsp salt                                          1/4 Cup powdered sugar

2 tsp lemon juice

Preheat Oven to 350.  Sift dry ingredients (except sugar) together and set aside.  Combine bananas, sugar, butter, egg, and basil then fold into flour mixture until well combined.

Fill greased muffin pans and bake for 10-15 minutes.  Let cool in pan for 5 minutes then transfer to a wire cooling rack until cool to the touch.

For the lemon drizzle, mix in lemon juice with powered sugar until runny.  Drizzle on top of muffins.
